Recipe for Gyros


You have a choice of using ground lamb or leg of lamb (I prefer leg of lamb).

  1. 1 pound ground beef or 1 leg of lamb
  2. 1 small onion, chopped
  3. 1 clove garlic, crushed
  4. 1 tablespoon vegetable oil
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon ground cumin
  7. 1/4 teaspoon pepper
  8. 4 whole wheat pita breads (six-inch diameter)
  9. shredded lettuce
  10. 1 chopped tomato



 

Prepare yogurt dressing. Cook and stir ground lamb; onion and garlic in oil over medium heat until lamb is brown; drain. Stir in salt, cumin and pepper.

If you prefer leg of lamb; I suggest you rotisserie it. As it becomes brown, slice it off. Put the onion and garlic in oil or butter over medium heat until tender; drain, stir in salt, cumin and pepper.

Split each pita bread halfway around edge with knife; separate to form pocket. Spoon 1/4 of lamb mixture into each pocket. Top with lettuce and tomato. Serve with Yogurt dressing or ranch dressing.
